Salad Mandalas

 
My creations are often made entirely from the food that grows in my garden and I find that these are the most satisfying mandalas for me to make. Beauty then becomes part of the nourishment of the meal and the creating is a meditation in itself.
 
I love to use the different textures and colours to create new patterns and to appreciate the beauty of natures many gifts to us, as well as the great variety of flavours. Leaves and flowers are so wonderfully diverse, that they are just begging to be arranged artistically.... and yes, it's all totally edible! Much to the surprise of many people.
